WARNING! SPOILERS FOR GOOD OMENS S2!
I am fully aware I disappear for months at a time, post one thing, then disappear again, but Neil Gaiman is my God now and I must appease him.
So, I recently learned about the coffee theory. If you don't know what that is, from my understanding, it's basically a theory that Metatron miracled/tampered with/did something to the coffee he gave Aziraphale to make Aziraphale go with him and not stay with Crowley.
I personally love this theory, so I made art for it! I took the line from season 1:
"It started in a garden, and it will end in a garden."
And changed the word garden to temptation, because the Metatron tempted Aziraphale with the coffee(according to the coffee theory at least). I also made the first 'temptation' roughly the color inside an apple to represent the bite Eve took from it. I made the second 'temptation' brown to represent the coffee in the cup Metatron gives Aziraphale. I did my best and I hope you all enjoy it!

In the last episode of season two, right after Aziraphale told Crowley what the Metatron told him, Crowley says this:
"When Heaven ends life here on Earth, it'll be just as dead as if Hell ended it."
I think there's a hell of a lot more to this line than we think. Especially with what Crowley says after.
So, we know Crowley created the universe and he was super proud of it, and when he learned it would be destroyed, he was understandably angry and confused. I also think this is why he lived on Earth and not in Hell like other demons. He wanted to spend as much time with his creation as he could before it was ripped from him.
Well, I think his first "Please tell me you said no" after the whole destroying Earth thing was him saying "You helped me save my beautiful creation once, don't make me do it alone this time."
And after the pause I think his second one was him actually hoping Aziraphale would say that he said no. Then when Aziraphale reveals that he didn't say no, Crowley starts to confess as his, as we all know, last-ditch effort to get Aziraphale to stay.
Sure, Aziraphale has already said yes, but he hasn't left yet. He may not have lived on Crowley's beautiful planet for 6000 years like Crowley did, but he was here now and Crowley didn't want him to leave.
In short; I don't think Crowley refused Aziraphale's offer because he didn't want to become an angel again, at least not fully the reason. I think he refused it because he couldn't bear leaving behind his beautiful creation, even if it meant losing the love of his life and dying with his creation by the hand of Heaven.

I don't think Metaton chose to make Aziraphale the new Supreme Arch Angel just because he knew so much about the way humans did things, but also because he was very, very close friends with Crowley.
I don't think it's because that gives Metatron a vantage point if Hell tries to step in and stop the Second Coming, but simply because he doesn't like Crowley.
We know Crowley was once a very high ranking angel, between creating the stars and being able to look at Gabriel's file when he needed high ranking clearance, it's obvious. The show, at first, makes us assume Crowley asked God his questions before he fell. But later on during the whole Job flashback, near the end we see God talking to Job. Aziraphale looks surprised to see God talking to someone, which is fairly understandable, but Crowley is also surprised. Now, this may not seem like much at first, but then Crowley says
"But just to be able to ask the questions."
It sounds like Crowley never made it to God with his questions, so who did he go to? Well, in the last episode, right after Crowley leaves the bookshop and the Metatron comes back, he says about Crowley
"Always asking damn fool questions, too."
Crowley didn't get to ask God his questions. They only got as far as Metatron it seems. Assuming Metatron is the one that pushed him from heaven, coupled with the glare he shoots Crowley before going to talk with Aziraphale, I believe he found out about how happy Aziraphale made Crowley and couldn't stand it. As a result, he purposely chose to rip Aziraphale away from Crowley to force Crowley back into that loneliness he mentioned back in the Job flashback in episode 2.
Metatron wants nothing more than to make Crowley miserable just because he questioned a few things 6,000 years ago. Metatron can't stand to see Crowley happy, and the best way to make it stop is by taking away the one thing that truly makes him happy. Aziraphale.
