I don't think Metaton chose to make Aziraphale the new Supreme Arch Angel just because he knew so much about the way humans did things, but also because he was very, very close friends with Crowley.
I don't think it's because that gives Metatron a vantage point if Hell tries to step in and stop the Second Coming, but simply because he doesn't like Crowley.
We know Crowley was once a very high ranking angel, between creating the stars and being able to look at Gabriel's file when he needed high ranking clearance, it's obvious. The show, at first, makes us assume Crowley asked God his questions before he fell. But later on during the whole Job flashback, near the end we see God talking to Job. Aziraphale looks surprised to see God talking to someone, which is fairly understandable, but Crowley is also surprised. Now, this may not seem like much at first, but then Crowley says
"But just to be able to ask the questions."
It sounds like Crowley never made it to God with his questions, so who did he go to? Well, in the last episode, right after Crowley leaves the bookshop and the Metatron comes back, he says about Crowley
"Always asking damn fool questions, too."
Crowley didn't get to ask God his questions. They only got as far as Metatron it seems. Assuming Metatron is the one that pushed him from heaven, coupled with the glare he shoots Crowley before going to talk with Aziraphale, I believe he found out about how happy Aziraphale made Crowley and couldn't stand it. As a result, he purposely chose to rip Aziraphale away from Crowley to force Crowley back into that loneliness he mentioned back in the Job flashback in episode 2.
Metatron wants nothing more than to make Crowley miserable just because he questioned a few things 6,000 years ago. Metatron can't stand to see Crowley happy, and the best way to make it stop is by taking away the one thing that truly makes him happy. Aziraphale.

The song Church by Fall Out Boy is just Crowley thinking about Aziraphale.
WARNING!SPOILERS FOR GOOD OMENS SEASON 2!
My favorite part of Good Omens, which is right next to Gabriel and Beelzebub singing together which is right next to The Kiss™, is when Crowley first sees Gabriel in Aziraphale's shop.
Most of it is because of his utter panic, the way he screams "AHHH! GABRIEL!", and the fact that his eyes look like they're about to pop out of his head. But I also love it because of what happens just before when Crowley and Aziraphale are in Nina's coffee shop.
Not only does Crowley immediately grow jealous at the 'naked man friend' bit, he also orders six(6) shots of espresso in a cup with absolutely nothing else. Then Aziraphale nervously asks if that calms him down and when Crowley says "Not really, no" Aziraphale IMMEDIATELY asks Nina what calms people down because he knows Crowley is not going to be calm after finding out who exactly is in his bookshop.
I just find the whole thing absolutely hilarious and would die to see it all again for the first time.
I feel like Aziraphale would love to watch artists create their art. He obviously loves books which I personally find as a form of art. (I classify art as anything that is intended to make a person feel strong emotion and is the product of a person's imagination)
I imagine he knows about pretty much every form of art, but hasn't seen most done in person. Like, he's probably watched a painter paint(I like to imagine he got to see Michaelangelo paint some of the Sistine Chapel ceiling), and probably saw a potter use a poetry wheel, an oragami master teach him how to make a simple paper crane, etc. But I like to imagine there are some arts he hasn't seen in the making of, but would love to.
Knitting/crochet, for example. He's definitely felt the end result of someone knitting/crocheting a hat/scarf/blanket/etc, but he's probably never actually seen it being made. I think he'd find it fascinating how different they are but how the end result of either craft can look so similar. I think he'd love to see someone take a ball of yarn, and with nothing but some wooden needles or a wooden hook, make a masterpiece. Something he could wear or decorate or keep warm with.
And of course this is just one example. There are hundreds more that could be used, and I'm curious to see what other forms of art Aziraphale hasn't seen the making of yet, but has seen the end result of. I'd just love to see his amazed little smile and hear him ask question after question about the craft and how it's done. I love him so much <3

first shot we get of crowley in s3 is set to queen's somebody to love and as it starts with "each morning i get up and die a little / can barely stand on my feet" we see him literally getting out of bed (been sleeping for months) and bump into countless bottles of wine scattered on the floor. he looks around looking for a half-full bottle and starts drinking again.
doorbell rings. multiple times.
he drags himself to the door and opens it as the song says "somebody to love". it stops abruptly and turns to complete silence as we see aziraphale at the door holding an infant (baby jesus 2.0) looking like he just ran a marathon.

I feel like I need to reiterate AND go into further detail on my post:
The song Church by Fall Out Boy is just Crowley thinking about Aziraphale.
Let's start with the reiteration bit.
The song Church by Fall Out Boy, can go both ways.
It could be Crowley thinking about Aziraphale OR Aziraphale thinking about Crowley. This is probably gonna be a long post because I'm also gonna be adding lyrics for anyone who hasn't heard the song.
I'll start with why it works for Aziraphale thinking about Crowley.
If you were church, I'd get on my knees
Confess my love, I'd know where to be
My sanctuary, you're holy to me
I'm gonna focus on the last line. Throughout Good Omens, we hear Aziraphale try to tell Crowley he's nice, but Crowley always says he's not nice because he's a demon, not an angel like he used to be. Aziraphale being insistent on Crowley being good, and being happy about being able to turn him back into an angel, makes me think Aziraphale never really stopped thinking of Crowley as an angel. He never stopped thinking of him as something holy.
And take the pain
Make it billboard big then swallow it for me
Crowley can turn into a snake, as we saw in season 1 in the garden of Eden. And as we all know, snakes can unhinge their jaw to eat larger prey. I think the pain Aziraphale could be referring to here is the pain he's been given by Heaven. As Crowley said, "We don't need Heaven, we don't need Hell! They're toxic!"

Once again, I'll be focusing mainly on the last line. Aziraphale puts himself into danger and Sometimes keeps himself in danger because it makes Crowley happy to rescue him.
You were doomed but just enough
Crowley was cast out from Heaven because he questioned things. Maybe if he had asked one less question he would still be an angel.
Got a few more fake friends
And it's getting hard to know what's real
I imagine these lines would be after Aziraphale went back to Heaven, but eventually realises that he's made a mistake. Now he's torn between what he's believed his whole life with Heaven, and going back to Crowley to take back what he lost at the end of season 2.
Now I'm going to do the same thing for Crowley!

Crowley, a fucking demon, had already gone into a church once to save Aziraphale, knowing full well it was going to hurt. That alone was practically him confessing his love to Aziraphale. What difference would it be if Aziraphale was the church?

Aziraphale wanted to turn him back into an angel so he could come with him to Heaven, to change Heaven. As we can all probably assume, Heaven is definitely going to change in season 3.
Oh, the things that you do in the name of what you love
Crowley ran into a burning bookshop because he thought Aziraphale was still in there. He was willing to fire a gun at Aziraphale knowing full well that it could kill him. He mircaled away the stain on Aziraphale's coat after he got shot with a paintball. He went to Heaven to find out what the hell was going on so he could keep Aziraphale safe. He even put himself in direct harm's way to stop a war that would force him to fight the love of his life. TWICE!
