Here's something heartening to find, especially as a backup way possibly alongside freeze-drying if needful (such as was common in the Andes in the form of chuño, lingli, & tunta to name a few for saving tubers beyond best known potatoes). We can learn from Native people quite alot including beyond food & medicine, so make sure you use what you learn from whatever groups you happen to find & use it for good.
