They did Eric dirty in both these movies.

Designs completely aside, it feels to me like Matt and Trey were just thinking about what would be funny to the average viewer who is mildly familiar with South Park lore.

"Oh, remember how Cartman hates Jews and is practically a nazi? He's a happily married rabbi with three children now. Isn't that funny?"

And then:

"You know how Cartman is lazy and constantly tries to avoid any responsibilities? Well, he's a homeless alcoholic now, while everyone else is almost perfectly happy with their lives. Isn't that hilarious?"

Which is fair enough, South Park is obviously a comedy, after all, it's just not entirely consistent with what we've seen from Eric up until now.
