Headcannons, (these are my personal headcannons and aren’t cannon!):
Undyne: The reason her hair got shorter is either because of starvation or the stress of ruling the underground.
Alphys: Alphys got more wrinkles from the stress of repowering the Core. She also got noticeably skinnier.

Headcannons, (these are my personal Headcannons and aren’t cannon!):
Froggit: A lot of the monsters in the ruins don’t sleep as much because of the few good hiding spots.
The faces on the Froggits stomach’s are sad, both because of hunger and sadness.
The bloodthirst made this Froggit (and possibly other remaining monsters) start getting foam out of their mouth when it gets near others, humans and monsters. They don’t hesitate before attacking
Loox: Unsure of how their legs work, but they look like their body floats on top of them, it would make sense for starving monsters to take a leg.
The Looxs sharpened their claws for “self defence”
To explain their teeth? A guess would be that the Loox always had sharp teeth but they were hidden behind the body (if that makes sense), but over time the Loox developed an overbite.

Napstablook: Although Napstablook didn’t go insane from hunger, the spirits from the past humans drove Napstablook insane.
The core might’ve had a sort of effect on Napstablook like with grillby(?) which would explain Napstablooks new appearance.
Napstablook have lost/forgotten the ability to transform his tears into a hat
The blood is from another monster killing another monster and the blood ending up splashing on Napstablooks sheet.
Napstablook is one of the few who doesn’t have a bloodlust
Napstablook feels a little guilty for not saving the humans and innocent/weak monsters
