Like, of course he is her sunshine boy! Look at him! So sweet and bright and full of goodness and hope. I have this headcanon that "sunshine boy" is kind of like when parents refer to the kid that they had after a miscarriage, ectopic pregnancy etc, as their "rainbow baby" that Steve was dubbed a "sunshine baby" because he'd survived birth despite being so chronically ill.
And it didn't matter to Sarah that Steve was sick and Joseph often berated him or beat on him for being a "useless little runt", she had her beautiful sunshine baby, who eventually grew into her beautiful sunshine boy.
