Ooo sounds delicious
Cinnamon muffins
Two cups of all purpose flour (add more if it’s too wet)
One cup of sugar
Four teaspoons of baking powder
* ½ teaspoon of salt
* One cup of milk (I don’t know how non dairy milk will work but experiment!)
½ a cup of vegetable oil
Two eggs (again I don’t know how a supplement for eggs would work but if you know please tell)
A tablespoon of cinnamon
1 teaspoon of nutmeg (optional I just add it for a stronger flavor)
A splash of vanilla extract (go by what feels right)
Two tablespoons of cinnamon sugar to top
Mix together the flour, spices, salt, and baking powder, set aside. Combine milk, sugar, oil, eggs, and vanilla till blended.
Combine wet and dry ingredients until a smooth batter forms.
Grease a muffin tin throughly, pour the batter into the tin evenly then sprinkle cinnamon sugar on top.
Bake at 350° for 15-20 minutes.
Let cool for five minutes in pan then transfer to cooling rack and let cool completely.
Enjoy!
(Adding berries like blueberries or blackberries too the recipe is delicious too)
